justify;\">Being a self confessed cooking and food addict does not mean that I am completely immune to those days when you just don\u2019t know what to cook for dinner or simply, and possibly more honestly in my case, just can\u2019t be bothered trying to create something delicious.\u00a0 Yes, it was one of those days!\u00a0 So what was I to do.\u00a0 G isn\u2019t the kind of person who expects dinner on the table when he gets home.\u00a0 Don\u2019t get me wrong, I know he loves eating good food but if I told him we were ordering take away he would be quite happy because it would be a bit of a treat for us.\u00a0 Not wanting to delve into the world of take away food, I racked my brain for something simple for me to cook using the ingredients I had in the pantry that tasted good and was something I hadn\u2019t made for G before.\u00a0 Not a big ask at all really!!!\u00a0 Then I remembered something that I saw when I was making the <a href=\"http:\/\/www.foodfourthought.com.au\/blog\/?p=331\">bbq chicken casserole<\/a> from my original recipe\u00a0book.\u00a0 It met every requirement on my list.\u00a0 So without further ado, the winner is&#8230;&#8230;&#8230;\u00a0<\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #ce2307;\">creamy chicken casserole (recipe by Fiona from Food 4 Thought)<br \/>\nserves\u00a04<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #346c17;\">Ingredients<\/span><br \/>\nOlive oil, for shallow frying\u00a0<br \/>\n750g skinless chicken breast fillets<br \/>\n1 onion, finely diced<br \/>\n3 rashers of bacon<br \/>\n2 cloves garlic, crushed<br \/>\n\u00bc cup medium\/dry sherry<br \/>\n1 x 420g tin of cream of chicken soup<br \/>\n\u00bd cup thick cream<br \/>\nsalt and pepper, to taste<br \/>\nbread, for croutons<br \/>\n2 Tbls butter, melted<\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #346c17;\">Preparation<br \/>\n<\/span>Preheat oven to 180\u00b0C and place casserole\u00a0dish or oven proof pan over a medium heat.<\/p>\n<p style=\"text-align: justify;\">Pour 2 Tbsp of oil into pan, slice chicken fillets into 1cm thick slices.\u00a0 Add chicken pieces and cook until golden brown on both sides.\u00a0Remove from pan and set aside.\u00a0 Add onion and cook until translucent and slightly golden, about 4 \u2013 5 minutes.\u00a0 \u00a0Remove the rind from the bacon and cut into 1cm cubes. \u00a0Add to the pan along with the garlic and cook for further 3 \u2013 4 minutes, stirring to avoid catching on case of the pan.\u00a0<\/p>\n<p style=\"text-align: justify;\">Deglaze the pan by adding the sherry and allowing it to come to the boil.\u00a0 Add chicken back to the pan along with all other ingredients except the bread.\u00a0 Mix well to combine.\u00a0 If there is not enough sauce add a little hot water.<\/p>\n<p style=\"text-align: justify;\">Cut enough bread into 2cm cubes to cover the top of the dish.\u00a0 Brush bread with melted butter to assist browning.\u00a0 Bake in oven for 20 \u2013 25 minutes or until sauce is bubbling at the sides and the bread is slightly golden and crisp.\u00a0\u00a0<\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #346c17;\">My tips:<\/span>\u00a0\u00a0*If you do not want to add the bread, serve this with pastry disks (like I did) or you can even use\u00a0it as a sauce for some fresh pasta.\u00a0 *If the sauce appears a little dry you can add water or stock if you prefer.\u00a0 *Add any vegetables that you like to this dish.\u00a0 *Don\u2019t try and use low fat cream as it can curdle when heat is applied.\u00a0 *My mum read this blog and told me that she used to also change the soup that she used and that would change the flavour completely.\u00a0 She gave me the example of cream of mushroom soup and adding fresh mushrooms.\u00a0 You can make this whatever you want to.<\/p>\n<p style=\"text-align: justify;\">\u00a0<\/p>\n<p style=\"text-align: justify;\"><a rel=\"attachment wp-att-404\" href=\"http:\/\/www.foodfourthought.com.au\/blog\/?attachment_id=404\"><img decoding=\"async\" justify;\"><strong>\u00a0<\/strong><\/p>\n<p style=\"text-align: justify;\"><strong>ease: 10\/10.<\/strong>\u00a0 This is a quick and easy mid week meal.\u00a0 To make it even easier, buy a roast chicken on the way home from work and use the meat in place of the chicken fillets.\u00a0 There is no need to cook the chicken, just add it to the sauce before topping the dish with the bread.<br \/>\n<strong>prep time:<\/strong> <strong>15mins.<br \/>\ncooking time: 20mins.<\/strong><br \/>\n<strong>total: 35mins.<\/strong><\/p>\n<p style=\"text-align: justify;\"><strong>taste: 9\/10.<\/strong>\u00a0\u00a0This dish has a complexity that it almost doesn\u2019t deserve given the ease and limited time it takes to create.
