So following a paleo lifestyle didn&#8217;t really present me with a &#8220;no bread&#8221; challenge.\u00a0 However, when I want to have a burger, I like to pick it up and feel like I&#8217;m eating a burger.<\/p>\n<p style=\"text-align: justify;\">I have always loved cauliflower and more recently I feel that I have become somewhat obsessed.\u00a0 I want to try it as many ways as I can and I&#8217;m starting to realise just how versatile this inconspicuous little vegetable is.<\/p>\n<p style=\"text-align: justify;\">These are something that I&#8217;ve wanted to\u00a0&#8220;play with&#8221; for a little while now.\u00a0 You can use the recipe (minus the\u00a0garlic and rosemary) as a base and create your own flavours.\u00a0 Add your <a href=\"http:\/\/www.foodfourthought.com.au\/blog\/?p=3519\"><span style=\"color: #000080;\">favourite burger<\/span><\/a> and enjoy.<\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #ce2307;\">(paleo\/LCHF)\u00a0Cauliflower buns\/rolls\u00a0(recipe\u00a0by Fiona at Food 4 Thought).\u00a0<\/span><br \/>\nNo: Gluten \/ Grain \/ Dairy \/ Soy \/ Nuts<br \/>\nContains: Eggs<br \/>\nMakes 6-8 complete buns\/rolls.<\/p>\n<div style=\"text-align: justify;\"><span style=\"color: #346c17;\">You will need<\/span><br \/>\nOven<br \/>\nSpatula<br \/>\nEgg flip or similar<br \/>\nGlass bowl<br \/>\n2\u00a0x baking tray lined with non-stick paper<br \/>\n9-10cm round cookie cutter or similar<br \/>\nCooling rack<\/div>\n<p style=\"text-align: justify;\"><span style=\"color: #346c17;\">Ingredients<\/span><br \/>\n1 sprig (approx. 20cm in length) fresh rosemary, leaves only OR 1 tsp dried rosemary<br \/>\n1 clove garlic, peeled<br \/>\n400g cauliflower florets, chopped into bite-sized pieces<br \/>\n\u00bd teaspoon\u00a0fine salt<br \/>\n2 Tablespoons (30g) coconut flour<br \/>\n2 eggs<br \/>\n1 \u00bd &#8211; 2 Tablespoons nutritional yeast flakes (optional)<br \/>\nPoppy\/sesame seeds, to sprinkle on top (optional)<\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #346c17;\">Preparation<\/span><\/p>\n<p style=\"text-align: justify;\">Pre-heat oven to 180\u00b0C and prepare baking trays.<\/p>\n<p style=\"text-align: justify;\">Place rosemary leaves into mixing bowl and mill for <strong>1 minute \/ Speed 10<\/strong> (If using dried rosemary, skip this step). \u00a0Add garlic and chop for <strong>5 seconds \/ Speed 6<\/strong>.\u00a0 Add cauliflower and chop for <strong>4 \u2013 6 seconds \/ Speed 5<\/strong>.\u00a0 This should\u00a0be a rice texture.<\/p>\n<p style=\"text-align: justify;\">Scrape around sides of mixing bowl, add remaining ingredients and mix for <strong>20 seconds \/ Reverse \/ Speed 4<\/strong>. \u00a0Scrape mixture into a separate bowl.<\/p>\n<p style=\"text-align: justify;\">Place cookie cutter onto lined baking tray.\u00a0 Take approx. 80g (1\/3 cup packed) of mixture and pour into cutter.\u00a0 Using hands or back of a spoon, press the mixture firmly into shape.\u00a0 Complete with remaining mixture. \u00a0See tips for shaping. Sprinkle half with seeds if you wish.<\/p>\n<p style=\"text-align: justify;\">Place buns in the oven and bake for 20 minutes, then turn over and bake for further 10 minutes or until golden and firm to touch.<\/p>\n<p style=\"text-align: justify;\">*While buns are baking, make <a href=\"http:\/\/www.foodfourthought.com.au\/blog\/?p=3519\"><span style=\"color: #000080;\">these burgers<\/span><\/a> if you like.<\/p>\n<p style=\"text-align: justify;\">Once cooked, remove from oven and place onto cooling rack, cool enough to handle and serve. To store, cool completely and store in an air tight container for up to 2 days.<\/p>\n<p style=\"text-align: justify;\">When you want to use them, you can reheat them in a 180\u00b0C for 5 \u2013 7 minutes or crisp them under the grill.<\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #346c17;\">My tips<br \/>\n<span style=\"color: #000000;\">*Substitute any other dried herb if you don\u2019t have rosemary.<\/span><strong><\/strong><br \/>\n<span style=\"color: #000000;\">*Shaping &#8211; Make sure the mixture is pressed in firmly.\u00a0 To make the &#8220;bun tops&#8221;, once pressed into\u00a0shape remove cutter then gentle press edges down so they are slightly thinner than centre and have a tapered appearance.\u00a0 <\/span><br \/>\n<span style=\"color: #000000;\">*Add any burger and toppings that you like.<\/span><strong><\/strong><br \/>\n<span style=\"color: #000000;\">*We didn\u2019t have any left over to check how they freeze but I think they would freeze quite well.<\/span><strong><\/strong><br \/>\n<span style=\"color: #000000;\">*To reheat these I used an air fryer. 180\u00b0C for 4 minutes was perfect<br \/>\n*For LCHF &#8211; You could add a couple of tablespoons of cheese in place of the nutritional yeast and some ham if you like.<br \/>\n*Rosemary\u00a0&#8211; I find when using fresh rosemary (and a small amount) just removed from the stem, it is difficult to cut in the Thermomix.\u00a0 I suggest you either take the leaves off the stalk and sit them on the bench uncovered overnight to dry out a little or put them on a lined tray and bake in oven for a few minutes to do the same.\u00a0\u00a0<\/span><\/span><\/p>\n<p style=\"text-align: justify;\"><a href=\"http:\/\/www.foodfourthought.com.au\/blog\/?attachment_id=3541\" rel=\"attachment wp-att-3541\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-large wp-image-3541\" title=\"Cauliflower buns\" src=\"http:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2017\/01\/With-C-PS7067x2-575x486.jpg\" alt=\"\" width=\"575\" height=\"486\" srcset=\"https:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2017\/01\/With-C-PS7067x2-575x486.jpg 575w, https:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2017\/01\/With-C-PS7067x2-300x253.jpg 300w, https:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2017\/01\/With-C-PS7067x2-150x126.jpg 150w, https:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2017\/01\/With-C-PS7067x2-400x338.jpg 400w, https:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2017\/01\/With-C-PS7067x2.jpg 807w\" sizes=\"(max-width: 575px) 100vw, 575px\" \/><\/a><\/p>\n<p style=\"text-align: justify;\"><strong>ease: 9\/10.\u00a0\u00a0Just a little bit of shaping required.<\/strong><br \/>\n<strong>prep time:\u00a020 minutes\u00a0<\/strong><strong>\u00a0<\/strong><strong><br \/>\ncooking time:\u00a030 minutes\u00a0<\/strong><br \/>\n<strong>total:\u00a050 minutes\u00a0<\/strong><\/p>\n<p style=\"text-align: justify;\"><strong>taste: 9.5\/10<\/strong>\u00a0These are great.\u00a0They stand up like a &#8220;normal&#8221; bun.<\/p>\n<p style=\"text-align: justify;\"><strong>would I make it again:\u00a0 Oh yes.\u00a0\u00a0<\/strong><\/p>\n<p style=\"text-align: justify;\">\n","protected":false},"excerpt":{"rendered":"<p style=\"text-align: justify;\">\n<p style=\"text-align: justify;\">I&#8217;ve never been a big bread eater.
