justify;\">In a recent <a href=\"http:\/\/www.foodfourthought.com.au\/blog\/?p=2680\">post<\/a> I mentioned my effort to cook\u00a0 with ingredients that were in season.<\/p>\n<p style=\"text-align: justify;\">I think a big part of what drives me to do so is\u00a0shopping for fresh fruit and vegetables at local markets.\u00a0 When the new season produce is on the shelf I am like a kid in a candy store.\u00a0 The \u201cooh&#8217;s and aahs\u201d flow freely from my lips.\u00a0 Often I am so excited that we end up with a glut of whichever ingredients happens to catch my eye.<\/p>\n<p style=\"text-align: justify;\">This month it was blueberries.\u00a0 As you may know they are considered to be a \u201csuperfood\u201d.\u00a0 This is taken from About.com &#8211; \u201cThey are very high in vitamin content, fibre and most\u00a0 importantly, antioxidants.\u00a0 In recent studies blueberries were found to be at the top of the list of fruits in their ability to destroy free radicals.\u00a0 Many consider this an important factor in preventing various types of cancer.\u00a0 Red wine has been touted for its antioxidant benefits, but blueberries have almost 40% more antioxidants than red wine.\u201d\u00a0 So maybe a blueberry shake should be replacing that glass of red wine. \ud83d\ude42<\/p>\n<p style=\"text-align: justify;\">I decided to make something that used up lots of things that I had in my fridge that I wanted to finish off.\u00a0 So out came the yoghurt, the lemon curd and I grabbed one of the many lemons in my citrus bowl.\u00a0 While the best way to enjoy blueberries may be raw, they&#8217;re great used in all kinds of recipes and given my other ingredients I decided on a cake.<\/p>\n<p style=\"text-align: justify;\">I found several recipes that I liked bits and pieces of and combined them into this.\u00a0 I was trying to sneak some gin in there (because lemon, blueberry and gin is a great combination) but alas, I think that would have been one step too far \ud83d\ude42<\/p>\n<p><span style=\"color: #ce2307;\">blueberry, lemon, yoghurt cake \u2013 (recipe\u00a0by Fiona at Food 4 Thought).<\/span><br \/>\n<span style=\"color: #ce2307;\"> makes 1 loaf cake<\/span><\/p>\n<p><span style=\"color: #346c17;\">Ingredients<\/span><br \/>\n160g sugar<br \/>\nRind on 1 lemon, peeled<br \/>\n80g butter, softened<br \/>\n2 eggs<br \/>\n300g self-raising flour<br \/>\n60g lemon juice<br \/>\n150g greek style (thick) yoghurt<br \/>\n100g lemon curd<br \/>\n150g fresh blueberries<\/p>\n<p><span style=\"color: #346c17;\">Preparation<\/span><br \/>\nPreheat the oven to 170\u00b0C with the fan on (or 180\u00b0C for non fan-forced oven).\u00a0 Line and\/or spray a x x x loaf pan.<\/p>\n<p>Add sugar and lemon rind to TM bowl and mill for\u00a0<strong>20 seconds on speed 10<\/strong>.<\/p>\n<p>Scrape down sides of bowl, add butter and mix for<strong>\u00a015 seconds on speed 4.\u00a0 <\/strong>Add butterfly, mix for <strong>1 minute<\/strong> on <strong>speed 3<\/strong>.<\/p>\n<p>With blade running on <strong>speed 3<\/strong>, add eggs\u00a0one at a time then beat for <strong>30 seconds<\/strong>.<\/p>\n<p>Add flour and\u00a0lemon juice, mix for <strong>10 seconds<\/strong>\u00a0on <strong>speed 1.\u00a0 <\/strong>Add yoghurt and mix for<strong> 10 seconds <\/strong>on<strong> speed 2.<\/strong><\/p>\n<p>Add lemon curd and blueberries, mix for <strong>10 seconds <\/strong>on <strong>reverse, speed 1.\u00a0 <\/strong><\/p>\n<p style=\"text-align: justify;\">Pour into prepared\u00a0loaf tin\u00a0and bake for 40 \u2013 45 mins at 170C fan-forced oven.\u00a0 Check if cooked by testing middle of cake with a toothpick.\u00a0 If it comes out clean it is cooked.<\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #346c17;\">My tips:<\/span> It is important not to overmix this batter and that is why I decided to do it in stages.\u00a0 This means that the ingredients are combined well without being overworked.\u00a0 *This cake is extremely moist due to the yoghurt, lemon curd and blueberries.\u00a0 Ensure it is cooked in the centre and cool in the tin slightly before unveiling, cooling completely on a wire rack\u00a0and serving with whipped cream.\u00a0 *You can use yoghurt and lemon curd that you make in the Thermomix.\u00a0 *Make sure you don&#8217;t overmix the cake.\u00a0 It is nice to have (kind 0f) ribbons of lemon curd throughout the mixture.<\/p>\n<p><a cooling time.<\/p>\n<p><strong>taste: 8.5\/10.<\/strong>\u00a0The lemon curd\u00a0is like a soft ripple throughout the cake and the yoghurt gives it a tartness that I really like.<\/p>\n<p><strong>would I make it again:\u00a0 Yes.\u00a0\u00a0<\/strong>Because I can use up things that I would otherwise throw out!\u00a0 And it happened to taste really
