{"id":817,"date":"2010-05-16T20:48:15","date_gmt":"2010-05-16T12:48:15","guid":{"rendered":"http:\/\/www.foodfourthought.com.au\/blog\/?p=817"},"modified":"2010-06-08T08:45:45","modified_gmt":"2010-06-08T00:45:45","slug":"cinnamon-roll-muffins","status":"publish","type":"post","link":"http:\/\/www.foodfourthought.com.au\/blog\/cinnamon-roll-muffins\/","title":{"rendered":"Cinnamon roll muffins"},"content":{"rendered":"<p style=\"text-align: justify;\"><a rel=\"attachment wp-att-820\" href=\"http:\/\/www.foodfourthought.com.au\/blog\/?attachment_id=820\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-medium wp-image-820\" title=\"Cinnamon roll muffins\" src=\"http:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2010\/05\/Blog-CR-4-16.5.10-300x253.jpg\" alt=\"\" width=\"300\" height=\"253\" srcset=\"http:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2010\/05\/Blog-CR-4-16.5.10-300x253.jpg 300w, http:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2010\/05\/Blog-CR-4-16.5.10-575x486.jpg 575w, http:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2010\/05\/Blog-CR-4-16.5.10-150x126.jpg 150w, http:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2010\/05\/Blog-CR-4-16.5.10-400x338.jpg 400w, http:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2010\/05\/Blog-CR-4-16.5.10.jpg 807w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p style=\"text-align: justify;\">\u00a0<\/p>\n<p style=\"text-align: justify;\">Sunday is normally the day when I have a small window of time to bake a little and it is a time that I treasure.\u00a0 Baking is something that makes me feel satisfied, brings a warm feeling to my heart and makes me feel like I am nurturing those I love.\u00a0 One of G\u2019s favourite ingredients is cinnamon, he loves the scent that it delivers along with the flavour.\u00a0 Studies show that men associate cinnamon with love so when I bake anything with cinnamon in it I know that he feels that little bit of extra love from me. \ud83d\ude42\u00a0<\/p>\n<p style=\"text-align: justify;\">I have been on the lookout for an easy cinnamon scroll recipe for some time.\u00a0 Normally they involve yeast, possibly rising overnight, in all, a little too much hassle.\u00a0 They are also quite calorie laden as they are gorgeously sticky which, of course is part of the attraction but given that we are both watching our waistline at the moment I also wanted a slightly lighter version.<\/p>\n<p style=\"text-align: justify;\">Discovering this recipe a few weeks ago meant that it went onto my \u201cmust bake\u201d list and today was the day.\u00a0 G was doing some work at his Mum\u2019s so I decided to make afternoon tea for anyone in attendance.\u00a0 Hopefully my creation would make everyone feel loved!<\/p>\n<p><span style=\"color: #ce2307;\">cinnamon roll muffins &#8211; (recipe from <a href=\"http:\/\/rubyglen.com\/recipe\/cinnamonroll.htm\">Ruby Glen<\/a> \u2013 adapted by Fiona at Food 4 Thought)<br \/>\nmakes 12<\/span><\/p>\n<p><span style=\"color: #346c17;\">Ingredients<br \/>\n<\/span>1 cup milk<br \/>\n1 tablespoon lemon juice<br \/>\n1\/2 cup brown sugar (firmly packed)<br \/>\n1\/2 teaspoon salt<br \/>\n2\u00a0teaspoons bicarbonate soda<br \/>\n1 egg<br \/>\n1\/2 teaspoon vanilla<br \/>\n3 1\/2 cups flour<br \/>\n60g soft butter<br \/>\n60g sugar<br \/>\n2 teaspoons cinnamon<br \/>\n\u00a0<br \/>\n<span style=\"color: #346c17;\">Preparation<br \/>\n<\/span>Preheat oven to 180\u00b0C.\u00a0\u00a0<\/p>\n<p style=\"text-align: justify;\">Combine milk and lemon juice, set aside.\u00a0 In a bowl stir together brown sugar, salt and bicarb soda. \u00a0Mix in egg, vanilla and then milk mixture.\u00a0 Stir in flour to form a firm dough. \u00a0Transfer to a floured surface and knead for a minute until silky.\u00a0 Do not overwork as it will become tough.<\/p>\n<p style=\"text-align: justify;\">Roll or press dough out into\u00a0a 20cm x 30cm rectangle.\u00a0 Spread with butter leaving about a 1cm border on every side.\u00a0 Combine the sugar and cinnamon, sprinkle over the butter.\u00a0 Roll up starting from the longer side to make a 30cm log.\u00a0 Cut into 12 pieces approximately 1 &#8211; 1\u00bdcm thick. Place pieces into a greased or lined 12-hole muffin tray. \u00a0Bake for 20 minutes, until golden brown.<\/p>\n<p style=\"text-align: justify;\">Remove from oven and serve warm or at room temperature.<\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #346c17;\">My tips\/alterations:<\/span>\u00a0\u00a0*You can substitute the lemon juice with vinegar if necessary.\u00a0 *It may seem odd to use bicarb soda rather than baking powder but there is a reason for this.\u00a0 This\u00a0<a href=\"http:\/\/www.taste.com.au\/good+taste\/article\/q+and+a+michelle\/can+i+substitute+baking+powder+for+bicarb+soda,180\">link<\/a>\u00a0provides a good explanation of the process.\u00a0 *I think this dough could benefit from a short resting time once it is kneaded. \u00a0Next time I make these I would rest the mixture for 15 mins before rolling it out.\u00a0 I think it will give the muffins a softer texture.\u00a0 I would also press the edges firmly into the muffin trays to encourage the centre to pop up a little more.\u00a0 *We added cinnamon cream to this.\u00a0 I made it by simply whisking \u00bd cup of cream until it holds shape, adding 1 Tbsp icing sugar and 1 tsp cinnamon.\u00a0 Whisk until soft peaks form.\u00a0 This may seem sweet but the dough is not so they work well together.<\/p>\n<p><strong><a rel=\"attachment wp-att-821\" href=\"http:\/\/www.foodfourthought.com.au\/blog\/?attachment_id=821\"><img decoding=\"async\" loading=\"lazy\" class=\"alignleft dollop of cinnamon cream (see My tips above).\u00a0 On their own I thought they had good flavour but were a little dry.\u00a0 Several comments came from the rest of the group.\u00a0 They loved the flavour, especially because they were warm and served with the cinnamon cream.\u00a0 The crunchy outside gave these a great texture and they weren\u2019t as heavy or overly sweet as normal cinnamon rolls. \u00a0<\/p>\n<p style=\"text-align: justify;\">It was requested that the leftovers be divided up so that everyone could take some home.\u00a0 That is always a good sign.\u00a0<\/p>\n<p style=\"text-align: justify;\"><strong>would I make it again:\u00a0\u00a0Yes I would.<\/strong>\u00a0 I would make the adjustments that I mentioned and serve them warm with the cinnamon cream
