adapted by Fiona at Food 4 Thought)<br \/>\nmakes one loaf<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #346c17;\">Ingredients<\/span><br \/>\n\u00bc cup melted butter, cooled<br \/>\n1 egg<br \/>\n1 \u00be cups self raising flour\u00a0<br \/>\n\u00be cup sugar<br \/>\n1 tsp baking powder<br \/>\npinch of salt<br \/>\n3 medium size bananas, mashed<br \/>\n\u00bd cup milk<br \/>\n1 handful of walnuts or pecan nuts (not in the original recipe, this is my addition)<br \/>\n\u00a0<br \/>\n<span style=\"color: #346c17;\">Preparation<\/span><br \/>\nPreheat oven to 160\u00b0C.\u00a0 Line and grease a\u00a021 x\u00a011cm loaf pan (measured at the base).<\/p>\n<p style=\"text-align: justify;\">Use a whisk to beat the cooled butter and egg together until well combined and smooth. \u00a0Add the flour, sugar, baking powder and salt.\u00a0 Stir to distribute butter mixture throughout the dry ingredients.\u00a0 It will not combine completely.\u00a0 Add the banana, milk and nuts.\u00a0 Stir to combine.\u00a0 Do not over mix the batter as it may become tough.\u00a0<\/p>\n<p style=\"text-align: justify;\">Pour the mixture into a prepared tin and bake for 50 \u2013 60 minutes, until a skewer inserted into the centre of the cake comes out clean.\u00a0<\/p>\n<p style=\"text-align: justify;\">Remove from the tin and allow to cool on a wire rack before slicing and serving with any accompaniments that you desire.<\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #346c17;\">My tips:<\/span>\u00a0\u00a0*Make sure the butter is cool before adding the egg, otherwise you will have scrambled eggs.\u00a0 *I know that baking is a science and that all things should be measured perfectly.\u00a0 However, this mixture is a little forgiving and therefore &#8220;a handful of nuts&#8221;
