Mango flesh is rich in pre-biotic dietary fiber, vitamins, minerals, and poly-phenolic flavonoid antioxidant compounds.\u00a0 It is an excellent source of potassium, vitamin A, vitamin C and vitamin B6.\u00a0 Even better is that they taste great.<\/p>\n<p>This recipe was given to me by my dear friend, Elisabeth Higgins.\u00a0 Of course, I had to put my own \u201cHealthy Spin\u201d on it but thank her for her generosity in sharing.<\/p>\n<p><strong>Mango, Ginger &amp; Lime Chia Pudding<\/strong><\/p>\n<p>No: Gluten \/ Grain \/ Dairy \/ Soy \/ Refined sugar.<br \/>\nSuits: Vegetarian, Vegan, Paleo, Low carb option<br \/>\nContains: Nuts (optional)<br \/>\nServes 4-6.<\/p>\n<p><strong>You will need<\/strong><br \/>\n4-6 serving bowls\/jars<br \/>\nSpatula<\/p>\n<p><strong>Ingredients<\/strong><br \/>\n<em>Pudding<\/em><br \/>\n20-30g (5-6cm piece) of peeled fresh ginger (more or less depending how much you like ginger<br \/>\n500-600g mango flesh (2 large or 3 smaller ripe mangos), diced<br \/>\n200g coconut cream<br \/>\n200g water<br \/>\nZest of 1 lime<br \/>\nJuice of 2 limes<br \/>\n70g chia seeds<\/p>\n<p><em>Decorations<\/em><br \/>\nToasted coconut flakes<br \/>\nPistachios or other nuts or seeds<br \/>\nFresh fruit: diced mango, raspberries, blueberries<\/p>\n<p><strong>Preparation\u00a0<\/strong><br \/>\n1.\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Add ginger to the mixing bowl and chop with <strong>MC on \/ 5 secs \/ Speed 9<\/strong>. \u00a0Scrape down.\u00a0 Repeat if necessary until finely chopped.<br \/>\n2.\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Add mango, coconut cream, water, lime zest and lime juice.\u00a0 Blend with <strong>MC on \/ 30 secs \/ Speed 8<\/strong>. Scrape down, blend again with <strong>MC on \/ 30 secs \/ Speed 8 <\/strong>or until very smooth.<br \/>\n3.\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Add chia seeds and mix with <strong>MC on \/ 20 secs \/ Speed 3<\/strong> or until incorporated.<br \/>\n4.\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Pour mixture into serving bowls, leaving space from the top for your decorations. \u00a0Use clear bowls\/jars for extra effect.<br \/>\n5.\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Preferably chill overnight or at least for 4 hours in the fridge.<br \/>\n6.\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Decorate just before serving.<\/p>\n<p>DOUBLING THIS RECIPE: You can double this recipe easily.\u00a0 You may need to assist the final mixing step by using the spatula through the hole in the mixing bowl lid to make sure everything is combined.<\/p>\n<p><strong>My tips<\/strong><br \/>\n* Using black chia seeds will result in a firm pudding consistency once set while white chia seeds don\u2019t swell up quite as much and the puddings will be a softer set.\u00a0 I used 50\/50 black and white seeds. \u00a0Either choice will not alter the flavour.<br \/>\n* Keep these covered in the fridge for up to 4 days.
