hearty rather than something that would go with salad which we tend to eat when the weather\u00a0is warm.\u00a0 I found\u00a0an entry\u00a0written in\u00a0my original recipe\u00a0book that I created when I first moved out of home.\u00a0 I remembered it being a delicious, slightly spicy dish that was very easy to make.\u00a0 Given that I had purchased some lovely free range chicken thighs earlier in the day\u00a0this seemed like the perfect\u00a0thing for dinner.\u00a0<\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #ce2307;\">bbq chicken casserole (recipe by Fiona from Food 4 Thought)<br \/>\nserves\u00a04 <\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #346c17;\">Ingredients<br \/>\n<\/span>Olive oil, for frying\u00a0<br \/>\n1\u00a0kilo chicken pieces (I used skinless, free range)\u00a0<br \/>\n1 onion, finely diced<br \/>\n1 1\/2 cups tomato sauce<br \/>\n2 Tbsp bbq sauce<br \/>\n1\/2 cup soy sauce<br \/>\n1 tsp mustard powder<br \/>\n1\/4 tsp cayenne pepper, or to taste<br \/>\n2 cloves garlic, crushed<br \/>\n2\u00a0Tbsp brown sugar\u00a0<br \/>\n\u00a0<br \/>\n<span style=\"color: #346c17;\">Preparation<\/span><br \/>\nPreheat oven to 180\u00b0C and place casserole\u00a0dish over a medium heat.<\/p>\n<p style=\"text-align: justify;\">Pour 2 Tbsp of oil into dish, add chicken pieces and cook until golden brown on all sides.\u00a0 Do not cook completely.\u00a0 Remove from pan and set aside.\u00a0 Add onion and cook until translucent and slightly golden, about 4 &#8211; 5 minutes.\u00a0<\/p>\n<p style=\"text-align: justify;\">Add chicken back to the pan along with all other ingredients.\u00a0 Mix well to combine.\u00a0 Seal dish with a lid and place in the oven for\u00a0 40 &#8211; 50 minutes, or until the chicken is beginning to fall off the bone.<\/p>\n<p style=\"text-align: justify;\">Remove from the oven and allow to rest for 15 minutes or so.\u00a0 Serve with steamed rice or mashed potato.\u00a0\u00a0<\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #346c17;\">My tips:<\/span>\u00a0\u00a0*I try\u00a0to use a low sodium tomato sauce, however, if you prefer you could use the same quantity of tomato passata\u00a0with a couple of tablespoons of tomato paste added to it.\u00a0\u00a0\u00a0*Use light soy sauce if you prefer a milder flavour.\u00a0 *Using skinless chicken pieces reduces the fat content of this dish.<\/p>\n<p style=\"text-align: justify;\"><strong><a rel=\"attachment wp-att-383\" href=\"http:\/\/www.foodfourthought.com.au\/blog\/?attachment_id=383\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-medium wp-image-383\" title=\"BBQ chicken casserole 2\" src=\"http:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2010\/03\/Blog-BBQC-19.3.10-300x253.jpg\" alt=\"\" width=\"300\" height=\"253\" srcset=\"http:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2010\/03\/Blog-BBQC-19.3.10-300x253.jpg 300w, http:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2010\/03\/Blog-BBQC-19.3.10-575x486.jpg 575w, http:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2010\/03\/Blog-BBQC-19.3.10-150x126.jpg 150w, http:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2010\/03\/Blog-BBQC-19.3.10-400x338.jpg 400w, http:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2010\/03\/Blog-BBQC-19.3.10.jpg 807w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a>ease: 10\/10.<\/strong>\u00a0 This is one of those things that you can throw in the oven when you get home and if you cut down on the cayenne even the kids\u00a0might eat it.<br \/>\n<strong>prep<\/strong> <strong>time: 25mins.<br \/>\ncooking time: 50mins.<br \/>\ntotal: 1hour 15mins.<\/strong><\/p>\n<p style=\"text-align: justify;\"><strong>taste: 8\/10.<\/strong>\u00a0\u00a0The evening I cooked this we had a friend for dinner unexpectedly.\u00a0 We all loved this meal for a mid week kind of thing.\u00a0 It was a different kind of comfort food.\u00a0 The only reason we didn&#8217;t score this higher was because it didn&#8217;t have a complexity to it that other dishes can have.\u00a0 As far as mid week comfort food is concerned I would rate it a 10!\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0<\/p>\n<p style=\"text-align: justify;\"><strong>would I make it again:\u00a0Yes<\/strong> \u2013 For a quick, easy, mid week meal and for unexpected guests \ud83d\ude42\u00a0<\/p>\n","protected":false},"excerpt":{"rendered":"<p style=\"text-align: justify;\">The weather has been a little cooler this week, staying in the high 20&#8217;s rather than being close to 40\u00b0C.
