My \u201cjourney\u201d began as a youngster in the kitchen with my Mum.\u00a0 I remember helping to make sausage rolls for my Dad\u2019s lunches and helping Mum mix the cakes, mainly so that I could lick the spoon.<\/p>\n<p>As a teenager my Brother and I were State level competitive swimmers.\u00a0 We trained about four hours a day at least 5 days per week so keeping our bodies\u00a0\u00a0 fuelled became really important.\u00a0 My grandparents had a farming property close by so most of our food came from the land.\u00a0 My Mum used to spoil us for dinner by making the best steak and kidney pie or lightly fried lambs fry (liver) with onion gravy.\u00a0 Delicious!<\/p>\n<p>Ironically enough, in my later teenage years I announced to my family one day that I was strict vegetarian.\u00a0 This, combined with excessive sports activity, resulted in a dramatic (and unhealthy) weight loss and body obsession.\u00a0 This went on for too many years.<\/p>\n<p>I am pleased to say that with years under my belt and lines on my face has come some wisdom.\u00a0 For quite a while I have eaten a healthy diet and exercised\u00a0\u00a0\u00a0\u00a0\u00a0 regularly.\u00a0 However I still enjoyed a sneaky dessert every now and then quite\u00a0\u00a0\u00a0 often.\u00a0 One of my favourites was my <a href=\"http:\/\/www.foodfourthought.com.au\/blog\/?p=593\"><span style=\"color: #000080;\">Mum\u2019s cheesecake<\/span><\/a>.\u00a0 It\u2019s really good.\u00a0 So you can imagine how disappointed I was when my lifestyle needed to change again (due to health reasons) and I began eating a Paleo diet.\u00a0 I just had to make some form of lemon cheesecake.\u00a0 Although completely different to my Mum\u2019s recipe, I love it just as much :).\u00a0 I hope you enjoy this #ce2307;\">(paleo)\u00a0lemon cheesecake<\/span>\u00a0\u2013\u00a0makes\u00a0one loaf tin\u00a0(recipe by Fiona at Food 4 Thought inspired by <a href=\"http:\/\/www.paleocupboard.com\/cheesecake-with-blackberry-compote.html\">Paleo Cupboard<\/a>).<\/p>\n<p><span style=\"color: #346c17;\">Ingredients<\/span><br \/>\n<span style=\"color: #ce2307;\"><em>base\u00a0<\/em><\/span><br \/>\n200g whole almonds (skin on), activated if possible (see notes below)<br \/>\n6 medjool dates, pitted<br \/>\n30g coconut oil, melted<\/p>\n<p><span style=\"color: #ce2307;\"><em>filling<\/em><\/span><br \/>\n200g raw cashews, soaked for at least\u00a05 hours or overnight, drained<br \/>\n60g pure maple syrup<br \/>\n130g fresh lemon juice<br \/>\n100g coconut milk<br \/>\n60g coconut oil, melted<\/p>\n<p><span style=\"color: #346c17;\">Preparation<\/span><br \/>\nLine a large baking tray with non-stick paper or a silicone mat.<\/p>\n<p>For <em>base, <\/em>place almonds and dates\u00a0into TM bowl and\u00a0chop\u00a0for\u00a0<strong>12 seconds <\/strong>on <strong>speed 8.\u00a0 <\/strong>Add\u00a0coconut oil\u00a0and mix\u00a0for\u00a0<strong>20 seconds\u00a0<\/strong>on <strong>speed\u00a04 <\/strong>or until combined.\u00a0 Pour into prepared tray and press down firmly.\u00a0 Place in freezer while making the filling.<\/p>\n<p>For <em>filling,<\/em> place all\u00a0ingredients\u00a0into TM bowl and mix\u00a0for\u00a0<strong>1 minute\u00a0<\/strong>on <strong>speed\u00a07 <\/strong>or until well\u00a0combined and smooth.\u00a0 Scrape around the sides of the bowl and repeat if necessary.\u00a0 Pour filling over the top of the base and place into fridge for at least 2 hours.<\/p>\n<p>Serve with whipped coconut cream and lemon slices.<\/p>\n<p><span style=\"color: #346c17;\">My tips:<\/span> *During winter coconut oil will solidify.\u00a0 The easiest way to melt it is to loosen the lid of the jar slightly then run the sides of the jar under hot water.\u00a0 It will melt quite quickly.\u00a0 *I\u00a0 activated the nuts by soaking them then roasting them in the oven.\u00a0 This process decreases levels of anti-nutrients such as phytic acid.\u00a0 You can find some more information\u00a0<a href=\"http:\/\/www.yousli.com.au\/activated-nuts\/\">here<\/a> and lots of other 8.5\/10.\u00a0\u00a0<\/strong>This is as easy as any other cheesecake I&#8217;ve made<br \/>\n<strong>prep time:\u00a015 minutes <\/strong>+ chilling time<strong>\u00a0<\/strong><strong><br \/>\ncooking time:\u00a00 minutes\u00a0<\/strong><br \/>\n<strong>total:\u00a015 minutes <\/strong>+ chilling time<\/p>\n<p><strong>taste: 9\/10<\/strong>\u00a0This\u00a0was (it went\u00a0pretty quickly) delicious.\u00a0 Even G, who is not a big coconut fan, loved this.\u00a0 It had a strong lemon tang to it and the filling was silky.\u00a0 The base had the right cheesecake crunch.<\/p>\n<p><strong>would I make it again:\u00a0\u00a0<\/strong><strong>Absolutely.\u00a0 And I want to try a chocolate berry version
