times\u00a0I have mentioned that the inspiration to create a new recipe can come from many and varied places.\u00a0 Although this recipe was developed more out of necessity than inspiration.<\/p>\n<p style=\"text-align: justify;\">Most places I\u2019ve lived I have been fortunate enough to have two fridge\/freezers or at the least a large fridge and a chest freezer.\u00a0 This meant that I have always been used to having enough food to feed a small army at any given moment.\u00a0 It has also translated into a particular way of shopping for ingredients.<\/p>\n<p style=\"text-align: justify;\">Growing up in a farming household, I was always taught to \u201csave the pennies and the pounds would come\u201d.\u00a0 We used to buy things when they were cheap\/in season\u00a0and store them where we could.\u00a0 To this day I still live by the same mantra.\u00a0 If something is on special at the supermarket, I have been known to buy five of the same thing and store them until I need to use them (taking into consideration use by and expiry\u00a0dates of course).<\/p>\n<p style=\"text-align: justify;\">So it should come as no surprise that as of last count I had no less than\u00a011 boxes of frozen berries in the freezer section of our second fridge.\u00a0 This was never a problem until recently when the thermostat on the fridge section decided to give up the ghost.\u00a0 I\u2019ve been able to empty the fridge and am slowly working my way through the freezer so that we can have it repaired.\u00a0 My main problem has been what to do with\u00a011 boxes of berries.\u00a0 In summer we have shakes and\u00a0smoothies, even berry ice-cream but in winter it is a little more challenging.<\/p>\n<p style=\"text-align: justify;\">I wanted to use them for something a little different, so I designed this recipe.\u00a0 I hope you like it.<\/p>\n<p style=\"text-align: justify;\">What is your favourite thing to do with frozen berries?\u00a0 Leave me a recipes)<\/span><br \/>\n<span style=\"color: #ce2307;\">makes 22cm\u00a0x\u00a022cm slice<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #ce2307;\"><em>crumble<\/em><\/span><br \/>\n<span style=\"color: #346c17;\">Ingredients<\/span><br \/>\n220g butter<br \/>\n250g plain flour<br \/>\n140g oats<br \/>\n100g sugar<br \/>\n100g light brown sugar<br \/>\n1 teaspoon baking powder<br \/>\n1\/2 teaspoon salt<\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #346c17;\">Preparation<\/span><br \/>\nDo the first step of the berry filling#.<\/p>\n<p style=\"text-align: justify;\">Preheat the oven to 180\u00b0C (170\u00b0C fan-forced).\u00a0 Line 22cm x 22cm cake tin with baking paper.<\/p>\n<p style=\"text-align: justify;\">Add butter to TM bowl and melt on<strong> 70\u00b0C<\/strong> for <strong>3 minutes<\/strong> at <strong>speed 1<\/strong>.<\/p>\n<p style=\"text-align: justify;\">Add\u00a0remaining ingredients and mix for <strong>30 seconds<\/strong> on <strong>reverse, speed 3<\/strong>.\u00a0 Scrap around sides of bowl and repeat for another <strong>30 seconds<\/strong> until well combined.<\/p>\n<p style=\"text-align: justify;\">Remove from bowl and press half the mixture into prepared tray and set the remainder aside.<\/p>\n<p style=\"text-align: justify;\">Bake base for 15 minutes, until slightly risen and lightly golden in colour.\u00a0 Once baked, remove from oven and cool for 10 minutes before pouring over berry mixture and sprinkling crumble topping.<\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #346c17;\">My tips\/alterations:\u00a0<\/span> *Press the base down firmly before baking.\u00a0 It will seem like you don&#8217;t have enough but it rises a little.\u00a0 *When I halved the mixture, I used the scales to weigh it out.\u00a0 *This base\/crumble mixture would make a great crumble topping for a pudding.\u00a0 I would pile it high for a great crunch.\u00a0 *You could top the base with anything you like, a custard topping or other fruit.<\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #ce2307;\"><em>filling<\/em><\/span><br \/>\n<span style=\"color: #346c17;\">Ingredients<\/span><br \/>\n250g frozen berries, thawed<br \/>\n100g raw sugar, milled for 3 seconds<br \/>\n1 tablespoon\/20g lemon juice<\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #13c346;\"><span style=\"color: #346c17;\">Preparation<\/span><br \/>\n<\/span>#Place berries into sieve and set aside to defrost.\u00a0 Once defrosted, drain as much juice as possible.<\/p>\n<p style=\"text-align: justify;\">Add sugar to TM bowl and mill for <strong>3 seconds<\/strong> on <strong>speed 9<\/strong>.\u00a0 Add lemon juice and well drained berries into TM bowl and cook at <strong>100\u00b0C <\/strong>for <strong>12 minutes<\/strong> on <strong>reverse, speed 1<\/strong> with <strong>MC off<\/strong>.\u00a0 If mixture starts to splatter, place simmering basket on top of lid.<\/p>\n<p style=\"text-align: justify;\">Pour berry mixture over base and sprinkle remaining crumble over the top. \u00a0Bake for an additional 30 &#8211; 35 minutes until crunchy and golden.\u00a0 Cool in tin for\u00a010 minutes then remove from tray.\u00a0 Cut into squares and serve warm or cold.<\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #346c17;\">My tips\/alterations:\u00a0<\/span> *This filling can also be used as a jam.\u00a0 Just pour it into a sterilised jar and allow to cool before storing in fridge.\u00a0 *Use any berries you like, adjust the sugar slightly depending on what berries you use.<\/p>\n<p><strong><a href=\"http:\/\/www.foodfourthought.com.au\/blog\/?attachment_id=2992\" rel=\"attachment wp-att-2992\"><img decoding=\"async\" the crumble plus <strong>5 minutes <\/strong>for the berry filling.<br \/>\n<strong>cooking time: 45 minutes <\/strong>in total<strong>\u00a0<\/strong>+ cooling time.<br \/>\n<strong>total: 55 minutes <\/strong>+ cooling time.<\/p>\n<p style=\"text-align: justify;\"><strong>taste: 9\/10.<\/strong>\u00a0This\u00a0is a\u00a0yummy slice, especially if you are a berry lover.\u00a0 So easy for\u00a0a great result.\u00a0\u00a0The sweet crumble and slightly sharp berries worked really well together.\u00a0 Everyone who was lucky enough to get a piece loved it.<\/p>\n<p style=\"text-align: justify;\"><strong>would I make it again:\u00a0 Absolutely.\u00a0<\/strong>In fact I have made it twice since developing it, need to use up more berries
