{"id":2913,"date":"2013-05-07T04:37:28","date_gmt":"2013-05-06T20:37:28","guid":{"rendered":"http:\/\/www.foodfourthought.com.au\/blog\/?p=2913"},"modified":"2014-06-21T17:45:51","modified_gmt":"2014-06-21T09:45:51","slug":"beetroot-chocolate-ice-cream","status":"publish","type":"post","link":"http:\/\/www.foodfourthought.com.au\/blog\/beetroot-chocolate-ice-cream\/","title":{"rendered":"Beetroot chocolate ice-cream"},"content":{"rendered":"<p style=\"text-align: justify;\"><a href=\"http:\/\/www.foodfourthought.com.au\/blog\/?attachment_id=2914\" rel=\"attachment wp-att-2914\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-large wp-image-2914\" title=\"Beetroot chocolate ice-cream\" src=\"http:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2013\/05\/PS-5194-210413-with-C-575x486.jpg\" alt=\"\" width=\"575\" height=\"486\" srcset=\"http:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2013\/05\/PS-5194-210413-with-C-575x486.jpg 575w, http:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2013\/05\/PS-5194-210413-with-C-300x253.jpg 300w, http:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2013\/05\/PS-5194-210413-with-C-150x126.jpg 150w, http:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2013\/05\/PS-5194-210413-with-C-400x338.jpg 400w, http:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2013\/05\/PS-5194-210413-with-C.jpg 807w\" sizes=\"(max-width: 575px) 100vw, 575px\" \/><\/a><\/p>\n<p style=\"text-align: justify;\">If someone had of told me a few years ago that I would be a Thermomix consultant I would have laughed until I fell off my chair.\u00a0 At the time, I was never going to own a kitchen appliance that cost $2000 \u201cbecause there was no way any appliance could be worth that much\u201d.<\/p>\n<p style=\"text-align: justify;\">However, as I mentioned in my last\u00a0post there are many things that I love about Thermomix and about having my own business as a whole.<\/p>\n<p style=\"text-align: justify;\">I love the fact that my business can help people change their lives, giving them more time, money and looking after their health.\u00a0 I love nothing more than when one of my clients emails me to tell me that they love their Thermomix and couldn\u2019t live without it!<\/p>\n<p style=\"text-align: justify;\">While a lot of what I do\u00a0is motivated by wanting to help others, there are also some great\u00a0rewards that I am sincerely grateful for.\u00a0 My absolute favourite part is the free holidays.\u00a0 So far I have been fortunate enough to travel to Hawaii and Hong Kong (all expenses paid) and my Husband has even been able to come along too!\u00a0 Part of the time away is spent attending a conference for a few days which has also been excellent for my business and personal growth.\u00a0 The rest of the time I get to know my fellow consultants, do some shopping and actually have a holiday!<\/p>\n<p style=\"text-align: justify;\">As a consultant we receive a specific monthly Newsletter and along with lots of great information each one has a feature ingredient that we can use to inspire us to create a recipe.\u00a0 Last month is was Beetroot.\u00a0 I\u2019ve never entered before because I usually don\u2019t have time to think about it but I\u2019ve always loved Beetroot so thought, why not!\u00a0 And guess what, I won!\u00a0 Crazy, I know.\u00a0 I wanted to do\u00a0something a bit unusual and had seen this once before.\u00a0 I had seen Hugh Fearnley-Whittingstall&#8217;s recipe for something similar on the <a href=\"http:\/\/www.rivercottage.net\/\">River Cottage<\/a> series.\u00a0 Hugh\u00a0is a British celebrity chef, television personality, journalist, food writer and &#8220;real food&#8221; campaigner, known for his back-to-basics philosophy (and he has a Thermomix).\u00a0 So, like so many of my other recipes, a little tweaking and adaptation to the Thermomix and voil\u00e0, my Beetroot Chocolate Ice-cream.<\/p>\n<p><span style=\"color: #ce2307;\">beetroot chocolate ice-cream \u2013 (recipe adapted by Fiona at Food 4 Thought from <a href=\"http:\/\/www.rivercottage.net\/recipes\/chocolate-beetroot-ice-cream\/\"><span style=\"color: #ce2307;\">here<\/span><\/a>).<\/span><br \/>\n<span style=\"color: #ce2307;\">makes approximately 1 litre<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #346c17;\">Ingredients<\/span><br \/>\n400 grams raw beetroot peeled and roughly chopped to yield 300g<br \/>\n500 grams water for steaming<br \/>\n100 grams raw sugar<br \/>\n150 grams full cream milk<br \/>\n250 grams cream<br \/>\n100 grams dark chocolate (70%) broken into pieces 150 grams full cream milk<br \/>\n4 whole eggs<\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #346c17;\">Preparation<\/span><br \/>\nPlace peeled and chopped raw beetroot into simmering basket.\u00a0 Add water to TM bowl and put simmering basket and beetroot in place.\u00a0 Steam\u00a0on <strong>Varoma temperature <\/strong>for <strong>25 &#8211; 30 minutes<\/strong> on<strong> speed 1. \u00a0<\/strong>Once cooked, remove basket and set aside.\u00a0 Empty water from TM bowl\u00a0then\u00a0rinse and dry the bowl.<\/p>\n<div style=\"text-align: justify;\">\n<p>Place chocolate into TM bowl and heat at <strong>60\u00b0C <\/strong>for <strong>2 1\/2 minutes<\/strong> on<strong> soft speed.<\/strong>\u00a0 Once melted, remove from bowl and set aside.<\/p>\n<\/div>\n<div style=\"text-align: justify;\">\n<p>Place sugar into TM Bowl and mill for\u00a0<strong>10 seconds<\/strong> on <strong>speed 9.\u00a0 <\/strong>Scrape around the sides of the bowl then add the beetroot and milk and puree for <strong>45 seconds<\/strong> on <strong>speed 9<\/strong> until smooth.\u00a0 Add\u00a0cream and\u00a0whisk for <strong>30 seconds<\/strong> on <strong>speed 3.\u00a0 <\/strong>With the blade still running add the eggs one at a time through the hole in the TM lid. \u00a0Continue to whisk for another <strong>30 seconds.<\/strong><\/p>\n<\/div>\n<div style=\"text-align: justify;\">\n<p>Cook at <strong>100\u00b0C <\/strong>for <strong>7 minutes<\/strong> on <strong>speed 4<\/strong>. \u00a0Add melted chocolate and mix for <strong>10 seconds <\/strong>on <strong>speed 4.<\/strong><\/p>\n<p>Pour into airtight container and freeze for 2-4 hours. \u00a0When partially frozen, place into TM bowl and remix for <strong>1 minute <\/strong>on <strong>speed 5 <\/strong>to give a creamier consistency.\u00a0 Return to airtight container and freeze for a minimum of 8 hours or overnight.<\/p>\n<p>Remove from freezer 15-20 minutes before serving.<\/p>\n<p><span style=\"color: #346c17;\">My tips\/alterations:\u00a0<\/span> *Use thick cream if you can, otherwise whipping cream will work.\u00a0 If you find the mixture looks like it has curdled after it is cooked, add an ice cube or a dash of extra cream and blitz it by slowly turning the speed from 1 to 9 then blitz on speed 9 for 30 seconds.\u00a0 It should be silky smooth.\u00a0 *If you would like this to be more of a beetroot colour you can roast the beetroot in some foil until soft.\u00a0 That is the traditional way to do this, but I wanted to do everything in the TM.\u00a0 If you would like this recipe to taste of a little more beetroot then try adding 75 grams of chocolate rather than 100 grams.\u00a0 *If you find it a little icy when you remove it from the freezer just let it sit for 20 &#8211; 30 minutes before serving it.\u00a0 You could also top it with some cold coconut milk\/cream for a healthy topping.\u00a0 *The longer this stays in the freezer the more icy it seemed to become, so I just left it out before servicing but you could also re-churn it prior to serving.<\/p>\n<\/div>\n<p style=\"text-align: justify;\"><strong>e<\/strong><strong>ase: 7.5 \u2013 8\/10.\u00a0 <\/strong>Not too difficult, just a few components.<br \/>\n<strong>prep time: 35mins <\/strong>for the beetroot.\u00a0 <strong><br \/>\ncooking time: 15mins <\/strong>for the ice-cream + cooling time.<br \/>\n<strong>total: 50 minutes<\/strong> + cooling time.<\/p>\n<p style=\"text-align: justify;\"><strong>taste: 9\/10.<\/strong>\u00a0This\u00a0is a delicious and healthier chocolate ice cream that has a beetroot finish to it.\u00a0 It was really surprising and the more you eat the better it tastes.\u00a0 I think it just takes a minute for your mind to forget you&#8217;re eating beetroot in ice-cream!<\/p>\n<p style=\"text-align: justify;\"><strong>would I make it again:\u00a0 Yes.\u00a0 <\/strong>I think for something different to share with friends I&#8217;d like to make this.\u00a0 Also it is a make ahead dessert, which I always good.<\/p>\n","protected":false},"excerpt":{"rendered":"<p style=\"text-align: justify;\">\n<p style=\"text-align: justify;\">If someone had of told me a few years ago that I would be a Thermomix consultant I would have laughed until I fell off my chair.
