{"id":2340,"date":"2011-07-02T22:14:03","date_gmt":"2011-07-02T14:14:03","guid":{"rendered":"http:\/\/www.foodfourthought.com.au\/blog\/?p=2340"},"modified":"2015-05-20T15:51:21","modified_gmt":"2015-05-20T07:51:21","slug":"pancakes","status":"publish","type":"post","link":"http:\/\/www.foodfourthought.com.au\/blog\/pancakes\/","title":{"rendered":"Pancakes"},"content":{"rendered":"<p><a href=\"http:\/\/www.foodfourthought.com.au\/blog\/?attachment_id=2341\" rel=\"attachment wp-att-2341\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-large wp-image-2341\" title=\"Pancakes\" src=\"http:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2011\/07\/Blog-TMP-4631-010711-PS-575x486.jpg\" alt=\"\" width=\"575\" height=\"486\" srcset=\"http:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2011\/07\/Blog-TMP-4631-010711-PS-575x486.jpg 575w, http:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2011\/07\/Blog-TMP-4631-010711-PS-300x253.jpg 300w, http:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2011\/07\/Blog-TMP-4631-010711-PS-150x126.jpg 150w, http:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2011\/07\/Blog-TMP-4631-010711-PS-400x338.jpg 400w, http:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2011\/07\/Blog-TMP-4631-010711-PS.jpg 807w\" sizes=\"(max-width: 575px) 100vw, 575px\" \/><\/a><\/p>\n<p style=\"text-align: justify;\">Even after many years of cooking, gaining valuable\u00a0 experience and improving my technical skills I have never been able to cook a light and fluffy pancake.\u00a0 Don\u2019t ask me why.\u00a0 Maybe it\u2019s the recipes I have chosen in the past or the ingredients I have paired together OR maybe it is simply because I wasn\u2019t using a Thermomix :).\u00a0 I\u2019m not sure, I just know that I\u2018ve never quite got it right.<\/p>\n<p style=\"text-align: justify;\">That is, until today!<\/p>\n<p style=\"text-align: justify;\">We have wanted to make pancakes for breakfast for a few weeks now and given the cold weather this morning it seemed like the ideal day.\u00a0 I decided to trust my fate in an internet search for the perfect pancake using the Thermomix.\u00a0 The Thermomix Forum popped up with (what appeared to be) a great result.\u00a0 I got started straight away so that I had time to allow it to stand for the suggested 30 minutes.<\/p>\n<p style=\"text-align: justify;\">I returned to find my mixture had thickened considerably so I added a little more milk to encourage it to pour more freely.\u00a0 I initiated \u201cProject Pancake\u201d by anointing my preheated pan with butter and pouring over a layer of the mixture.\u00a0 After a minute or so, I had lots of bubbles forming in the batter.\u00a0 \u201cBrilliant\u201d I thought.\u00a0 Bubbles mean light and fluffy pancakes, just what we really wanted for breakfast.\u00a0 I encouraged the edges to release from the pan then flipped it over to discover a gorgeously crisp crust.\u00a0 A few minutes on the other side firmed up the centre sufficiently and created a golden disc.\u00a0 Two seconds after it hit the plate, the pancake was doused with maple syrup and devoured by two delighted and astonished diners.\u00a0 More were made and all were eaten&#8230;&#8230;&#8230;..rather quickly.<\/p>\n<p style=\"text-align: justify;\">I couldn\u2019t believe how light these were, although they were really filling at the same time.\u00a0 These will definitely become a winter breakfast favourite in our house!<\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #ce2307;\">rara&#8217;s pancakes (recipe by\u00a0Maddy, posted on Forum Thermomix)<br \/>\nmakes\u00a0approx 10 large (20cm\/8 inch) pancakes &#8211; 1.25 l of batter<\/span><\/p>\n<p><span style=\"color: #346c17;\">Ingredients<br \/>\n<\/span>50g (\u00bc cup\/2 ozs) unsalted butter &#8211; cubed<br \/>\n350g (\u00be lb)\u00a0self raising\u00a0flour<br \/>\n60g (\u00bc cup\/2 ozs) caster sugar<br \/>\n2 eggs<br \/>\n500g (2 cups)\u00a0milk<br \/>\n1 tsp vanilla extract<br \/>\n<em>to serve<\/em><br \/>\nmaple syrup, blueberries and whipped\u00a0cream<\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #346c17;\">Preparation<br \/>\n<\/span>Place chopped butter in Thermomix jug.\u00a0 Melt for 2 minutes, 50\u00b0c, speed 1.<br \/>\nAdd in the remaining ingredients, and mix for 30 seconds, speed 5.<br \/>\nScrape down jug, and mix a further 30 seconds, speed 5-6.<br \/>\nLet the batter stand for at least 30 minutes.<br \/>\nBrush non-stick pan with melted butter\u00a0and cook on medium-low heat.\u00a0 Wait until mixture bubbles, then turn over.\u00a0 Cook for 1-2 minutes until pancake feels spongy but does not dent when pressed gently.<\/p>\n<p style=\"text-align: justify;\">Repeat with remaining mixture.\u00a0 Keep pancakes in a warm oven until ready to serve.<\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #346c17;\">My\u00a0tips\/alterations:<\/span>\u00a0 *I let my mixture stand for approx 1 &#8211; These were light and fluffy but had sufficient density that made them very satisfying.\u00a0 They were just sweet enough to allow them to be (almost) drowned in maple syrup without feeling like you were heading for a sugar high.<\/p>\n<p style=\"text-align: justify;\"><strong>would I make it again:<\/strong> <strong>Absolutely. <\/strong>These will definitely be a favourite winter breakfast in our house!<\/p>\n","protected":false},"excerpt":{"rendered":"<\/p>\n<p style=\"text-align: justify;\">Even after many years of cooking, gaining valuable experience and improving my technical skills I have never been able to cook a light and fluffy pancake.
