time in Perth is generally milder than most\u00a0other Australian cities but this year it has been exceptionally so.\u00a0 Last weekend temperatures were in the mid 20\u2019s (70\u00b0F) with no rain in sight for at least another five days.\u00a0 While the lack of rain causes its own issues I was grateful for the sun when G mentioned one of his mates was coming to visit with his two girls.\u00a0 I love having children over\u00a0to visit and Amy &amp; Charlotte are both gorgeous, well mannered girls who are a pleasure to have around.\u00a0 They were most excited to be able to play with our little girl (the dog) outside in the sunshine.<\/p>\n<p style=\"text-align: justify;\">Whenever we have guest I always like to have something to offer them, however because G &amp; I have been eating healthy lately our cupboard was bare.\u00a0 Being given just over\u00a0half an hour warning of their imminent arrival meant that I needed to bake something that was quick, easy and kid friendly.\u00a0 I pulled out one of my trusted recipe books and went hunting.\u00a0 My decision was guided by the difficulty and cooking time involved because I wanted them to be able to enjoy something while they were visiting.\u00a0<\/p>\n<p style=\"text-align: justify;\">As soon as I read this recipe I remembered that I had made them once before and knew that they would suit my requirements perfectly, so I set to work on creating something delicious.<\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #ce2307;\">peanut butter crinkles\u00a0\u2013 (recipe from The Australian Women\u2019s Weekly\u00a0Big Book of Beautiful Biscuits)<br \/>\nmakes about 25<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #346c17;\">Ingredients<\/span><br \/>\n125g (4ozs) unsalted butter<br \/>\n1\/3 cup (70g\/2.5ozs) sugar<br \/>\n1\/3 cup (70g\/2.5ozs)\u00a0brown sugar, lightly packed<br \/>\n1\/2 teaspoon vanilla extract<br \/>\n1\/2 teaspoon grated lemon rind<br \/>\n1\/3 cup (100g\/3.5ozs) peanut butter<br \/>\n1 1\/4 cups plain (all-purpose) flour<br \/>\n1 teaspoon bicarbonate of soda (baking soda)<br \/>\npinch\u00a0salt<br \/>\n\u00a0<br \/>\n<span style=\"color: #346c17;\">Preparation<br \/>\n<\/span>Preheat oven to 180\u00b0C\u00a0\u00a0(350\u00b0F\/Gas 4).\u00a0\u00a0<\/p>\n<p style=\"text-align: justify;\">Cream together butter, sugars, vanilla, lemon rind and peanut butter\u00a0until light and fluffy.\u00a0 Add sifted flour, soda and salt and mix until a stiff dough forms.<\/p>\n<p style=\"text-align: justify;\">Shape heaped teaspoonfuls of mixture into small balls with floured hands, place on a lined oven tray allowing room to spread slightly.\u00a0 Press biscuits down lightly with a fork, first crosswise then lengthwise, for a crinkled effect.\u00a0 Bake in oven for 15 minutes, until golden brown.\u00a0 Remove from oven and cool on tray.<\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #346c17;\">My tips\/alterations:<\/span>\u00a0\u00a0*I use crunchy peanut butter because I like the texture but any ki9nd will do.\u00a0 *I use a mini ice-cream scoop to measure out the mixture for each cookie, that way they are all even and cook the same.\u00a0 *When pressing the cookies down with a fork I dip it in flour before each time which stops\u00a0the fork sticking to the mixture.\u00a0\u00a0*Cooling these on the tray allows them to set properly before moving them.<\/p>\n<p style=\"text-align: justify;\"><strong><a rel=\"attachment wp-att-1643\" the mixture into balls takes most of this.<br \/>\n<strong>cooking time: 15mins.<\/strong><br \/>\n<strong>total: 45mins.<\/strong>\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0<\/p>\n<p style=\"text-align: justify;\"><strong>taste: 9\/10.<\/strong>\u00a0\u00a0These were delicious!\u00a0 They have the perfect balance of saltiness and sweetness, they melt in your mouth while also having a slight crunch to them.\u00a0 The brown sugar even makes the centre just a little bit chewy.\u00a0\u00a0G &amp; I had to make sure that these left the house otherwise our healthy eating would have gone out the window.<\/p>\n<p style=\"text-align: justify;\">Amy and Charlotte loved them as did those in G&#8217;s office who were lucky enough to get one.\u00a0<\/p>\n<p style=\"text-align: justify;\">I did keep a few hidden at home to nibble when we are desperate for a cookie fix.\u00a0\u00a0\u00a0<\/p>\n<p style=\"text-align: justify;\"><strong>would I make it again:\u00a0\u00a0Absolutely.<\/strong>\u00a0 One of the easiest cookies I&#8217;ve made and they tasted great.<\/p>\n","protected":false},"excerpt":{"rendered":"<p style=\"text-align: justify;\">\n<p
