recipe from the Aunt of a close friend (adapted by Fiona at Food 4 Thought)<br \/>\nmakes one loaf<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #346c17;\">Ingredients<br \/>\n<\/span>80g unsalted butter or margarine<br \/>\n3\/4 cup castor sugar<br \/>\n2\u00a0large eggs<br \/>\n1 1\/2 cups self raising flour<br \/>\n1\/2 cup yoghurt<br \/>\n2 teaspoons lemon rind<br \/>\njuice of\u00a02 lemons (60 &#8211; 80ml)<br \/>\n\u00a0<br \/>\n<span style=\"color: #346c17;\">Preparation<br \/>\n<\/span>Preheat oven to 180\u00b0C.\u00a0\u00a0Grease and line a 21 x 10cm loaf pan.<\/p>\n<p style=\"text-align: justify;\">Place the butter and sugar into a large bowl and mix until smooth and well combined.\u00a0 Scrap down the sides of the bowl and\u00a0add eggs one at a time, beating well after each addition.\u00a0 Add lemon rind and half the lemon juice and mix to combine.\u00a0 Add flour gradually and fold in.\u00a0 Fold in the yoghurt.\u00a0 Pour mixture into the prepared pan and bake for 30 &#8211; 40 minutes or until cooked.\u00a0\u00a0<\/p>\n<p style=\"text-align: justify;\">Remove from the oven and using a skewer make several holes in the cake while still in the tin.\u00a0 Pour extra lemon juice slowly over the top of the cake so that it soaks in.\u00a0 Remove from tin and dust the cake with icing sugar to serve.<\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #346c17;\">My tips\/alterations:<\/span>\u00a0\u00a0*The original recipe mentioned that you could use margarine in place of butter\u00a0and low fat yoghurt if you wish.\u00a0 I used unsalted butter and greek yoghurt in my cake.\u00a0 It also required a 25 x 11cm tin which would have meant the cake was flatter.\u00a0 This may mean that the cake would be moisture also as the lemon juice would penetrate\u00a0more of the cake. \u00a0*When creaming the butter and sugar I noticed that it did not become light and fluffy like in some recipes.\u00a0 This is due to the (low) ratio of butter to sugar.\u00a0\u00a0*The mixture was quite stiff until the yoghurt was added which\u00a0lightened it up considerably.\u00a0\u00a0* I cooked my cake in a fan forced oven and it\u00a0took 35 minutes.\u00a0 *To test if the cake is cooked, insert a skewer into the centre of the cake and if it comes out clean the cake is done.\u00a0<\/p>\n<p style=\"text-align: justify;\"><strong><a rel=\"attachment wp-att-1159\" href=\"http:\/\/www.foodfourthought.com.au\/blog\/?attachment_id=1159\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-medium wp-image-1159\" title=\"Lemon yoghurt cake 1\" src=\"http:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2010\/06\/Blog-LYC-20.6.10-300x253.jpg\" alt=\"\" width=\"300\" height=\"253\" srcset=\"http:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2010\/06\/Blog-LYC-20.6.10-300x253.jpg 300w, http:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2010\/06\/Blog-LYC-20.6.10-575x486.jpg 575w, http:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2010\/06\/Blog-LYC-20.6.10-150x126.jpg 150w, http:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2010\/06\/Blog-LYC-20.6.10-400x338.jpg 400w, http:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2010\/06\/Blog-LYC-20.6.10.jpg 807w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/strong><\/p>\n<p style=\"text-align: justify;\"><strong>ease: 9\/10.<\/strong>\u00a0\u00a0Simple cake method.\u00a0<br \/>\n<strong>prep time:<\/strong>\u00a0<strong>15mins.\u00a0 <\/strong><br \/>\n<strong>cooking time: 35mins.<\/strong><br \/>\n<strong>total: 50mins.<\/strong>\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0<\/p>\n<p style=\"text-align: justify;\"><strong>taste: 7\/10.<\/strong>\u00a0\u00a0This cake looked delicious and we served it to our guests with a dollop of double cream and they all raved about it.\u00a0 It didn&#8217;t impress me that much because I felt that it was too dry and the lemon juice that moistened the cake was too sharp.\u00a0 I make another cake similar to this that has lemon syrup (sugar, water, lemon juice) poured over the top and it is delicious.\u00a0 This seemed to fall short of that one.\u00a0 In the recipes defence, I did not have the correct size tin and this could have made a significant difference (see My tips\/alterations above).<\/p>\n<p style=\"text-align: justify;\"><strong>would I make it again:\u00a0\u00a0Probably not.\u00a0 <\/strong>I&#8217;d rather the other version that I make.<\/p>\n<p><strong>\u00a0<\/strong><\/p>\n","protected":false},"excerpt":{"rendered":"<p style=\"text-align: justify;\">\n<p style=\"text-align: justify;\">Visiting friends or having friends over always gives me a great excuse to bake and I often like to try something different.
