translation &#8211; great fun!).\u00a0 The second reason is that G&#8217;s niece, Alexandra, who lives quite a distance from us, absolutely LOVES white chocolate and I have been trying to think of a recipe that she would be able to make (with\u00a0 a little help from her Mum).\u00a0<\/p>\n<p style=\"text-align: justify;\">I had hardly anytime on the morning of race day to\u00a0bake because I wanted to take\u00a0some photos for my blog, finish preparing lunch and clean up before I left for the day.\u00a0 I made the Blondies\u00a0at 7am so needless to say they are quick &amp; easy because thinking too much at that time on a Saturday morning\u00a0can be\u00a0a little challenging at times.\u00a0 Within an hour they had baked, cooled and were packaged up ready to go.\u00a0 These could be the speedy gonzales of the baking world.<\/p>\n<p><span style=\"color: #ce2307;\">blondies\u00a0\u2013 (recipe\u00a0by Fiona at Food 4 Thought)<br \/>\nmakes about\u00a048 bite size pieces<\/span><\/p>\n<p><span style=\"color: #346c17;\">Ingredients<br \/>\n<\/span>160g unsalted butter<br \/>\n300g soft light brown sugar<br \/>\n1\/2 tsp vanilla extract<br \/>\n2 large eggs, lightly beaten<br \/>\n2 cups plain flour<br \/>\n2 tsp baking powder<br \/>\npinch of salt<br \/>\n60g roughly chopped pecans\u00a0<br \/>\n90g white\u00a0chocolate buttons<\/p>\n<p><span style=\"color: #346c17;\">Preparation<br \/>\n<\/span>Preheat oven to 190\u00b0C.\u00a0\u00a0<\/p>\n<p style=\"text-align: justify;\">Line a lamington tin (30cm x 21cm x 3cm) with non-stick bake paper.\u00a0 Melt the butter in a medium size saucepan.\u00a0 As soon as the butter is melted remove from the heat then add the sugar and vanilla.\u00a0 Stir to combine.\u00a0 Add the eggs to the pan and beat with a wooden spoon, until the mixture becomes smooth.\u00a0<\/p>\n<p style=\"text-align: justify;\">Sift the flour and baking powder into the egg mixture.\u00a0 Stir well with a wooden spoon then add the pecans and chocolate, stir well to combine.\u00a0<\/p>\n<p style=\"text-align: justify;\">Pour the mixture into prepared tin and bake for 15 minutes, until golden.\u00a0\u00a0 Once cooked, remove from the oven and leave in the tin to cool for 5 minutes.<\/p>\n<p style=\"text-align: justify;\">Cut into squares and store in an airtight container.\u00a0<\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #346c17;\">My tips\/alterations:<\/span>\u00a0\u00a0*If you would prefer to leave the nuts out, just increase the amount of chocolate that you put in.\u00a0 *I don&#8217;t use as much sugar as many other recipes but if you find these not sweet enough you can add extra as the recipe will take it and still work.\u00a0 *When spreading this mixture in the tin it may seem like there isn&#8217;t enough but just spread it to the edges as it will fill out as it cooks.\u00a0 *I like to cook these for 15 minutes because it gives them a fudgy, brownie like texture.\u00a0 If you would prefer them a little firmer, cake like texture then cook them for 20 minutes.\u00a0\u00a0*I find that these are best eaten on the day they are made, although they will keep for a few days in an air tight container.\u00a0\u00a0\u00a0<\/p>\n<p style=\"text-align: justify;\"><strong><a rel=\"attachment wp-att-1009\" href=\"http:\/\/www.foodfourthought.com.au\/blog\/?attachment_id=1009\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-medium wp-image-1009\" title=\"Blondies 2\" src=\"http:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2010\/06\/Blog-B-1-5.6.10-300x253.jpg\" alt=\"\" width=\"300\" height=\"253\" srcset=\"http:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2010\/06\/Blog-B-1-5.6.10-300x253.jpg 300w, http:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2010\/06\/Blog-B-1-5.6.10-575x486.jpg 575w, http:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2010\/06\/Blog-B-1-5.6.10-150x126.jpg 150w, http:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2010\/06\/Blog-B-1-5.6.10-400x338.jpg 400w, http:\/\/www.foodfourthought.com.au\/blog\/wp-content\/uploads\/2010\/06\/Blog-B-1-5.6.10.jpg 807w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/strong><\/p>\n<p style=\"text-align: justify;\"><strong>ease: 10\/10.<\/strong>\u00a0\u00a0The easiest thing I have made so far.<br \/>\n<strong>prep time:<\/strong>\u00a0<strong>15mins.\u00a0 <\/strong><br \/>\n<strong>cooking time: 15mins.<\/strong><br \/>\n<strong>total: 30mins.<\/strong>\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0<\/p>\n<p><strong>taste: 8.5\/10.<\/strong>\u00a0\u00a0Crunchy outside, fudgy inside, white chocolate and nuts, there is not too much more that you could want.\u00a0 The crew at the track loved these and almost emptied the container.\u00a0\u00a0We ate the rest within a few days.\u00a0\u00a0\u00a0<\/p>\n<p><strong>would I make it again:\u00a0\u00a0Yes.\u00a0 <\/strong>It is so quick and easy that it would be great to make whenever you are short on time.<\/p>\n","protected":false},"excerpt":{"rendered":"<p style=\"text-align: justify;\">\n<p style=\"text-align: justify;\">\n<p style=\"text-align: justify;\">Baking is one of my pleasures in life that I don&#8217;t need an excuse to do.
